Opening shell and typing: 

jani-laaksos-macbook:itmill-toolkit-4.1.0-rc5 jani$ sh start-demo.sh 
Please install Java Runtime Environment and define JAVA_HOME first.

I got "default" Leopard install.

Tested with: 4.1.0-rc5

Started OK, tested few demos shortly OK with Leopard.
